Drop Coffee Shakiso Ethiopien Alexander Ruas, Drop Coffee was one of  the baristas in Team Sweden in NBC Copenhagen and he is also the Barista Champ 2011. Brewed in the biginning of August in a french press. Guess in what cup I tasted the coffee? Nose: Sweet dark syrup and red berries. Palate: Full bodied, velvet soft, aromatic,  dark caramel sweetness.  Bluberry, wild strawberry, mature lemon, lemon peel and light green nordic pears (päronsplit). Long length and extremely soft and calm bitterness. Little spiciness in the aftertaste. If tasted blind I would say Nekisse.

The Saunasaari (Sauna Island) must be one of the most exotic places to conduct a chocolate tasting on. A small island just outside Helsinki, few buildings and many of them are suanas, the famous Finnish smoke saunas. We started the tasting, first flight, with Valrhona´s grand cru series.  Valrhona chocolate production in Tain I´Hermitage, Rhone Valley France. Kaffika´s tasting notes Manjari 64% from Madagascar: Darkbrown and reddish. Very soft texture, tickling acidity from red berries -lingonberry, wild strawberry and raspberry. Hazelnuts, some spiciness and soft bitterness. Full bodied and long length. This is the bakers favorite because of the red berries flavours. Tainori 64% from Dominican Republic: Dark brown. Soft texture, papaya, yellow pears and Grand Marnier. Soft bitterness. Full bodied and long length. Caraibe 66% from Caribbean: Dark brown. Fat soft texture. Pronounced but soft bitterness and tannins. A little bit nutty, kiwi and bananas. Full bodied. Very long…

Anders Öhman Mat & Vin (Anders Öhman Food & Wine) blogged about my idea of a new cup. Anders Öhman is one of the owners  of  the Gustibus Wine & Spirit Academy in Malmö Sweden. His blogg is really a great source for learning and inspiration. The cup (soon to be named) will be presented on a new web page and where you also can place an order.  It´s a cup that I couldn´t find in any shop but  needed when tasting coffes and teas. I presented my ideas and sketches to Risto Kokko/Daxhund Ceramics in spring 20011 and shortly after Risto made his model of what possibly could be produced.
